Easy Bacon and Rice Recipe
This easy bacon and rice recipe is perfect for times when you’re in a hurry to get supper on the table. It is quick to make and a delicious rice recipe that the entire family will enjoy!

The easy rice recipe makes for an excellent side dish for just about any meal. Or, enjoy it with a green salad to complete the meal.

I used chicken broth instead of water to cook the rice for this recipe. I find the chicken broth adds a lot of flavours. Also, chicken broth is full of healthy fat and other nutrients that are good for you.

In terms of rice, you can choose your favourite. I used white rice in this picture, but brown rice will work just as well

Bacon and Rice Recipe

Ingredients

2 tbsp olive oil
1 cup onion, diced
3 ¾ cups chicken broth (Note: The amount of liquid may vary depending on the rice you use. Always check the rice package and substitute the same amount of chicken broth for the amount of water called for.)
2 cups uncooked rice
8 strips of bacon, fully cooked and chopped into pieces. (Baked Bacon Recipe)

Instructions

In a medium-sized pot, heat olive oil on medium heat.

Add onions and saute for about 5 minutes.

Add chicken broth and bring to a boil.

Add rice and chopped-up bacon strips. Cook according to package instructions.
